Quick Pizza with Quinoa
You will need:
8.8 oz (250 g) quinoa
7 oz (200 g) cheese
2 cups of stock
vegetable mix for garnishing
28.2 oz (800 g) tomato paste
How to make it:
Preheat the oven to 410°F (210°C)
Boil the quinoa in the stock until it’s cooked. Then add 5.3 oz (150 g) of tomato paste and stir it well.
Grease small baking ramekins with butter and place them on a baking tray. Put 2 tablespoons of tomato paste in each ramekin. Spread the grated cheese on the tomato paste and add vegetables (bell peppers, mushrooms, red onion). Repeat with a second layer, then sprinkle each ramekin with the grated cheese.
Put the baking tray into the oven and bake for 20 minutes until the vegetables are cooked. If you want the dish to be golden brown, keep it a bit longer in the oven. Serve hot.
