
Chili Soup with Haricot Beans
You will need:
1 onion
2 cups of vegetable stock
3 potatoes
2 cups of water
14 oz (400 g) tomato paste
olive oil
1 tin of black haricot beans
spices according to taste
How to make it:
In a large pot over medium heat, sweat the chopped onion until it’s soft and transparent. Add salt and pepper.
Add the large potato cubes and any desired spices (chili, cinnamon, cumin). Fry it for 3 minutes and then add the tomato paste, water, and vegetable stock.
Bring the mixture to a boil, reduce the heat and add the haricot beans. Then simmer it on low heat for 20-30 minutes until the potatoes are cooked. Here is a little tip: give the soup a little brew after cooking in order for the vegetables to absorb the flavors better.
